According to tradition, the pruning starts at Kir-Yianni Estate on 1^st of February. This day is the feast of Saint Trifonas, protector of viticulturists and farmers.

Pruning, the major winter vineyard work, is used to remove extraneous canes and to retain a small number of good ones. Hence, we bring off the preservation of plant-forming system, regulate the liveliness and consequently the production of the grape vine.

At Ktima Kir-Yianni in order to protect the grape vine from various diseases, we spray the pruning wounds with copper.

Winter pruning lasts till middle of March.
